In my never-ending quest for the unusual, I was determined to combine some odd ingredients and produce a whopping good cake.
Dice:
5 ounces dried cherries
Toss with:
2 tablespoons flour
Set aside.
18.5 ounce Devil's Food cake mix
4 ounce package instant chocolate pudding
1/4 cup mocha powder
1 cup Hellman's mayonnaise (You can use low fat.)
1/2 cup vegetable oil
1/2 cup Dr. Pepper Cherry/Chocolate Ice Cream Syrup*
Combine and beat in:
4 eggs
Beat well after adding each egg. Beat until smooth. Then add:
2 cups semi-sweet chocolate chips
dried chopped cherries
Bake in a greased full-sized 9x13 pan for 43 minutes.
*Syrup at WalMart and through Dr. Pepper.com
If you can resist, let this cake sit overnight. It is so moist and rich it really doesn't need any icing, but it taste pretty good with whipped cream or ice cream.
