Snow on Chocolate


Yes, it is still cold and snowy here in Midland, Texas. I was inspired by all the whiteness and made some snowy looking treats. These are very easy and a good project for you and your kids on a school snow day.
mini cakes
1 package (18.25 ounces) devil's food cake mix
1 tablespoon mocha powder
1 tablespoon cocoa powder
1/2 cup (one stick)butter, melted
1 large egg
Combine ingredients. Use a small cookie scoop to form balls and place in paper lined mini muffin tins. This will make 43 mini cakes. Bake at 350 degrees for 8 minutes. Let rest five minutes and remove from pan and cool completely.
icing
1/2 cup half-and-half
1/2 cup granulated sugar
Place in 8 cup bowl and combine. Cook in microwave oven for 1 minute. Stir and cook an additional minute. Add:
14 tablespoons marshmallow cream or 14 large marshmallows
Stir until marshmallow has melted. Then add:
2 cups shredded coconut
Stir and frost each mini cake with a generous topping of "snow."
