Just a little joke there...the cake contains dried plums, better known as prunes. Don't let this keep you from trying this delicious cake.
¾ cup (1½ sticks) butter
1 cup granulated sugar
Beat for five minutes until very creamy. Add eggs one at a time, beating after each addition:
3 eggs
Stir in:
4 ounce package butterscotch instant pudding
2 cups flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking powder
½ teaspoon baking soda
Combine until smooth and add:
½ cup sour cream
Fold in:
1 cup chopped prunes
Bake in a greased
9x13 pan at 350° for 35 minutes. When cool, ice with:
2 tablespoons butter
½ cup brown sugar
Cook in the microwave for one minute. Stir and add:
2 cups confectioners' sugar
½ teaspoon cinnamon
1 teaspoon vanilla
⅓+ cup heavy cream
Beat until smooth and pour on top of cake.
